Coriander & Mint crumbed prawn Salad
¾ cups Homebrand plain flour
3 Homebrand egg whites, lightly whisked
500g crumbed Prawn Cutlets
100g mixed salad leaves
¼ cup coriander leaves, plus extra springs, to serve
¼ cup torn Countdown mint leaves
2 tablespoons vegetable or peanut oil
2 spring onions, sliced
1 fresh long red chilli, sliced
